No Sugar Added Blueberry Breakfast Muffins

Good Morning! These no sugar added, blueberry breakfast muffins are a great way to wake up! Don’t get me wrong, I LOVE blueberry muffins with sugar, and the extra sugar on top! But sometimes it’s nice to have a no sugar option for a healthy and quick breakfast. I often make these when I know we’re going to have a busy week so we can have something that’s healthy but grab-n-go!

Start by combining mashed banana, milk and chia seeds and set aside. Make sure to mash the banana so that it is nice and smooth without chunks. Doing this step first helps to activate the chia seeds before being baked!

Next, in a large mixing bowl, you will add all the dry ingredients and then add the wet ingredients, including the applesauce. You will want to do the mixing by hand, with a whisk or rubber scraper. And be sure not to over-mix! If your batter becomes too mixed, the muffins will turn out dense and flat.

When it comes time to add the blueberries, one of my favorite tips is to mash a few of them before adding to the batter. I love to have the flavor distributed throughout the muffin and it adds a nice touch of color! Once the batter is mixed, evenly distribute the batter into your muffin tins. My tins tend to stick to the batter so I like to do a quick wipe or spray with some oil before adding the batter.

These vegan, no sugar added, blueberry breakfast muffins are a healthy and tasty morning treat! Serve warm, plain or add a dash of plant butter!

Ingredients:

  • 2 cups all purpose flour
  • 2 tsp baking powder
  • Pinch of salt
  • 1 ripe banana
  • 1/3 cup sugar free applesauce
  • 1 cup unsweetened plant milk
  • 1 Tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 cup blueberries

Instructions:

  1. In a small bowl mash the banana and add milk and chia seeds and set aside.
  2. In a large bowl, add flour, oats, baking powder and a pinch of salt.
  3. Combine wet and dry ingredients in the large bowl.
  4. Add applesauce to the large bowl.
  5. Lightly mash some of the blueberries in the measuring cup. (Just enough to distribute the blueberry flavor into the batter)
  6. Mix in blueberries. (Do not over-mix)
  7. Evenly scoop out mixture into 12 muffin tins
  8. Bake for 25 mins. Enjoy warm plain or with a bit of plant butter!
